TRADITIONAL DUBROVNIK DISH: STON CAKE
Have you ever had macaroons inside a cake? The Ston cake is a puff pastry filled with macaroni with almonds or walnuts in addition to lemon, sugar, eggs, and butter. And be careful… sometimes they add chocolate. A typical meal that is definitely worth trying at least once.
Ingredients:
– 500 g of macaroni
– 250 kg of sugar
– 100 g of chocolate (for cooking)
– 250 g of peeled almonds
– 150 g of shelled walnuts
– 40 g vanilla sugar
– 1 g of cinnamon
– 90 g of lemon
– 250 g of butter
– 6 eggs
Puff pastry
– 400 g of flour
– 2 eggs
.5ml olive oil
a pinch of salt
Preparation:
Boil the macaroni and then let them cool. Prepare the chocolate and lemon peel or zest. Add to the chocolate, sugar, chopped almonds, walnuts, vanilla sugar, and cinnamon. Cut the butter into small cubes. Break the eggs and beat them gently.
Using flour, eggs, a little olive oil, and salt, make the homemade pasta and let it rest. Next, use a rolling pin to shape it into a thin sheet with which you can cover the entire mold.
Spread olive oil on the mold and cover it with pasta until it protrudes from the sides. Place a macaroni base, cover it with the mixture of chocolate, sugar, walnuts, almonds, vanilla sugar, and cinnamon, pour in the beaten eggs, and throw cubes of butter. Repeat this operation until you fill the mold or finish the ingredients. Place cubes of butter on the surface and close the upper part of the paste pressing gently so that it adheres to the filling. Spread melted butter on the surface and place in the oven for about 45 minutes at a temperature of 180ºC.
Take the cake out of the oven, let it cool, remove it from the mold and sprinkle it with sugar.
