TRADITIONAL LIJIANG, CHINA DISH: WON TON SOUP

INSTRUCTIONS: 

The Chinese have their own version of Italian ravioli: wontons. It is a wheat flour dough filled with minced pork, shrimp, onion, ginger, sesame oil and soy. They form round dumplings with a wrinkled texture similar to clouds. In fact, the name of this recipe literally means ‘swallow the clouds’. In China, wontons are often served in a very thin noodle soup with shrimp and spring onion. A curiosity: during the celebration of the Chinese New Year, silver coins are usually placed inside the wontons to wish good luck. Ingredients

 4 servings

40 pieces wonton dough

1 stem chives

White pepper

Sesame oil

*For the filling

300 g pork

300 g prawns

100g spring onion stems

1 tablespoon light soy sauce

1/2 tablespoon sugar

2 tablespoons cornstarch

1 teaspoon salt

White pepper

1 teaspoon sesame oil

*For soup

1 kilo pork and chicken bones (you can use only one of the two)

 2 onions

1 tablespoon light soy sauce

1 tablespoon salt

Water

 

 

Cut the onion in half and the spring onions into very thin slices, separating the green part from the white. Prepare the soup, in boiling water, put the chicken and pork bones, cook for 5 minutes, remove and wash well. high heat, put 2 liters of water, clean bones and onion. When it starts to boil, lower the heat and cook for 30 minutes. Add the light soy sauce, salt and cook for another 30 minutes.

while preparing the filling.

In a large bowl put the pork, prawns, cornstarch, light soy sauce, salt, white pepper, sesame oil and mix well until sticky. Add the whitest part of the spring onion, stir well , cover with a transparent film and leave to rest in the fridge for at least 20 minutes. Prepare Wonton. Take a little of the filling, put it in the center of the wonton dough and with the help of a mixture of water with a little flour. Close by making a triangle. Put a little more water on one of the ends and close well. Repeat until all the dough is filled. Cook the wontons in boiling water for 6 minutes, about 6 or 8 pieces per serving. Remove to cold water and then cook again for 1 more minute to get a suitable texture.While waiting, in the bowl where we are going to serve, put a little sesame oil, white pepper and light soy sauce.

Remove the wonton to the bowl , add a little spring onion, add the soup and it’s ready to eat.
