We are here in my kitchen, you know that I love to combine the rhythm of music with culinary art and I really enjoy those intimate spaces that the kitchen gives us, to later share and enjoy with our loved ones.
Well, let’s prepare our ingredients:
- 1 clean and well rinsed octopus
- 1 liter of water
- 1 leek
- Extra virgin olive oil
- 2 white potatoes cut into cubes
- 1 piece of fresh rosemary
- Ready-made fish broth
- Salt and pepper
We are going to clean and rinse our octopus very well, it can be intimidating but I assure you that it is very worth it, it is boiled whole in salted water, about 30 or 40 minutes you have to check that it is al dente.
While it is being fried in olive oil and in a deep saucepan, the leek is cut into small pieces, the peeled white potatoes are cut into cubes and the octopus tentacles are also cut, it can be with scissors. The octopus is added to the sautéed leek, fresh rosemary is chopped and added to the pot along with a liter of fish broth, add the potatoes and simmer for an hour.
Serve with a sprig of rosemary and fresh bread toasted with garlic and butter and enjoy with a glass of the most famous wine in the region, which can be Chianti or Antinoni and cheers !!!!
