Falafel

INSTRUCTIONS
Falafel are a kind of spiced chickpea meatballs or mini burgers that are usually fried or can also be cooked in the oven, I like this healthy option more and apart you can make it in balls as is the tradition or in the form of a cake so that each person cuts your piece.

We need:
- 1 ½ cup of dried chickpeas, soaked in water with a teaspoon of bicarbonate, for 12 hours, and drained.
- 1 cup chopped parsley
- 2 garlic cloves, cut into pieces
- ½ large onion, chopped
- 1 tsp baking soda
- 1 ½ tbsp flour
- 1 tsp cumin
- ½ tsp coriander (coriander seed)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp paprika
Try that all the ingredients are chopped more or less the same size so that they grind the same. Add everything in the processor until you have a paste fine enough to make balls, but not puree. It is a good idea in the middle of grinding it, stir with a wooden spoon so that everything remains the same. Frie each ball or put all the mix in a oven pan and in the oven for 30 minutes more or less, you have to see it lightly brown.
Serve with Israeli salad, cabbage, tahini, bread etc …
Falafel is served hot, usually accompanied by a Turkish yogurt sauce or a spicy sauce as an appetizer. It can also be served as a main dish accompanied by a good salad or as a quick dinner in a pita bread
